Uganda Organic Sipi Falls

On the eastern edge of Uganda, an extinct shield volcano rises in broad plateaus toward the Kenyan border. Three waterfalls tumble down its slopes, and across them more than 8,600 smallholder farmers tend small organic plots of arabica. This is East African coffee built on balance, not aggression.

Arabica's Revival on Mount Elgon

Mount Elgon is not a sharp peak. It spreads across the landscape as a series of plateaus, the remains of an enormous shield volcano split nearly in two by the Uganda-Kenya border. Volcanic loam soils and cool mountain air give the slopes a reputation for some of the most reliable organic coffee in Africa. The Sipi Falls region takes its name from the mountain's famous three-tiered waterfall in the Kapchorwa district.

Uganda is Africa's second-largest coffee producer after Ethiopia, but for decades the country leaned almost entirely on robusta. The Sipi Falls Coffee Project, started in 1999 with support from UTZ, helped change that by raising arabica quality and opening access to specialty markets. Today more than 8,600 smallholder farmers, many working plots averaging roughly two-tenths of a hectare, deliver ripe cherry to the centralized wet mill. At elevations of 1,450 to 2,200 meters, the fruit develops slowly and evenly, the foundation for a cup that rewards daily drinking rather than demanding attention.

The Craft

Fully Washed, Closed-Loop Processing

The mill processes this coffee with the fully washed method, the approach that prioritizes clarity and consistency. Farmers hand-pick ripe cherry and carry it to the central station, where it is pulped to strip away the fruit. Fermentation breaks down the remaining mucilage, the beans are rinsed in clean water, and drying finishes on raised patios before a final mechanical stage.

What sets Sipi Falls apart is its sustainability engineering. The mill earned organic certification in 2002 and was built with volcanic-stone wastewater management, water recycling, and low-energy machinery. The mechanical driers that finish the coffee run on dried coffee husks, a closed loop that turns processing waste back into fuel. We roast the green coffee to City+ in small batches, holding back enough to keep the cherry brightness and chocolate depth intact rather than scorching them away.

Integrated East African Character

Cherry opens the cup first, juicy fruit that stays bright without turning sharp. Chocolate follows close behind, grounding that brightness with semi-sweet warmth, while caramel threads through the mid-tones to add depth and roundness. A clean lemon acidity in the finish gives the cup structure and pulls you toward the next sip.

The medium body carries these flavors evenly, neither thin nor heavy, and the mild-bright acidity sits in the sweet spot between flat and tart. As the cup cools, watch for brown sugar to surface and the chocolate to deepen. What makes this coffee work is integration rather than intensity. Fruit, chocolate, and sweetness hold in balance, making it a dependable everyday brewer and a safe pour when guests bring mixed preferences.
