High in the Sierra Madre del Sur, where the mountains of Oaxaca drop toward the Pacific, the town of San Agustín Loxicha gives its name to one of Mexico's most storied coffees. We selected this fully washed Typica Pluma for its rare combination of clean sweetness and depth.

The Pluma Lands of Oaxaca

Mexico ranks among the world's largest coffee producers, and within it Oaxaca holds a reputation for character that outpaces its volume. San Agustín Loxicha sits in the Sierra Madre del Sur, a steep coastal range where shade trees, volcanic soil, and Pacific humidity shape the cherry. The Pluma name carries weight here. It marks a Typica lineage that adapted to these slopes across more than 80 years of cultivation, producing a cup prized for sweetness and balance.

This lot comes from Galguera Gómez and a network of roughly 37 surrounding family-owned farms, most of them ten to twenty-four acres. The company organizes these smallholders, shares better agricultural practices, and pays higher prices for higher quality, the kind of structure that keeps careful coffee in the hands of the people who grow it. The growing elevation between 1,200 and 1,350 meters lets the cherry mature slowly and develop its layered sugars.

The Craft

Washed at the Farm Mill

The producers process the harvest at their own micro-mill, giving them direct control over each step. The cherry is depulped, fermented to lift the fruit and clean the seed, then washed and dried with the attention that a small operation makes possible. This fully washed approach strips away the pulp early, so the flavor that reaches the cup is the seed's own, clear and precise rather than fruit-forward. We roast this Typica to City+, a level that holds the variety's gentle acidity while drawing out its chocolate and caramel weight. Typica is a delicate, lower-yielding plant, and the reward for that fragility is depth. A heavier roast would bury it. City+ keeps it honest.

Sweet, Buttery, and Deep

The first impression is sweetness, brown sugar and complex caramelized sugars that fill the mouth with a buttery weight. Underneath runs a current of milk chocolate, the kind of richness Pluma coffees are known for, with hints of dried cranberry and a soft thread of fresh citrus that keeps the cup from turning heavy.

Acidity stays gentle and rounded, so this is an easy coffee to live with, smooth across the whole cup and forgiving as it cools. It rewards a slower morning.
