Description
Along a deep ravine where the states of Veracruz and Puebla meet, the land falls away into Barranca Honda. The cliff pulls cooler, drier air across the slopes above Ixhuacan de los Reyes, slowing how cherries ripen and concentrating what ends up in the cup.

Veracruz stretches along Mexico's Gulf coast and holds the longest coffee history in the country. It helped launch Mexico's specialty renaissance in the 1990s, and its best lots now sit comfortably beside those from Oaxaca and Chiapas. The humid, sub-tropical climate and steep volcanic terrain give Veracruz coffee its signature balance: gentle acidity, nutty sweetness, and a clean, easygoing structure.
This lot comes from smallholder farms gathered around Barranca Honda, the cliff that divides Veracruz from neighboring Puebla. Most growers here work just a few hectares of shade-grown trees. At roughly 1,600 meters, the fruit earns its SHG grade, Strictly High Grown, and the colder pocket created by the ravine stretches ripening into a slow, even finish. The CraftFully Washed for Clarity
After hand-picking at peak ripeness, the cherries are sorted, de-pulped, and fully washed. This method strips the fruit away early, then ferments and rinses the beans clean, which is exactly why washed coffees taste so transparent. There is nowhere for off-flavors to hide, so the natural sweetness and the terroir of these slopes come through clearly.
