Here, 38 family farms work shared infrastructure to turn cherry into some of Mexico's most dependable coffee. The result is a cup that feels like home.

Mexico ranks among the world's ten largest coffee producers, and Chiapas, its southernmost state, accounts for roughly 40 percent of the national crop. Bella Vista occupies the high ground of the Sierra Madre de Chiapas, tucked between El Triunfo Biosphere Reserve and the border with Guatemala. The farms here are small, often under five acres, worked by multi-generational families and indigenous Maya communities who hand-pick cherry across steep, forested slopes.
Grown between 1,600 and 1,850 meters, this is classic strictly high grown coffee. The cool nights and slow ripening that come with high altitude concentrate sugars in the cherry and lend the cup its clean structure. After the 2012 leaf rust epidemic stripped the region's plants bare, farmers and importers rebuilt together, renewing over 5,000 hectares with healthy seedlings, fertilizer, financing, and purchase guarantees that gave growers a stable future.

The 38 farms of Bella Vista hold to traditional methods that have defined Chiapas coffee for generations. Cherry is hand de-pulped, then fermented in wooden tanks to lift away the fruit's sticky mucilage before a thorough wash. The lots finish drying on open patios under mountain sun, raked and turned by hand until the moisture is just right. This washed processing strips the cup back to the bean itself, rewarding the careful work done on the slopes above.
We roast Bella Vista to City+ in small batches at our Virginia Beach roastery. That medium-light level keeps the coffee's gentle sweetness and round body intact while drawing out its baking-spice warmth.
