In the highlands of Chiapas, where the Altos region rises into cool mountain air, second-generation farmer Mario Santiz Lopez tends Finca Altura Vista Hermosa. When leaf rust swept through in 2012 and gutted production across southern Mexico, the Lopez family replanted, rebuilt, and brought their farm back. This coffee is the result of that patience.

Chiapas is Mexico's leading coffee state, and its highlands sit among the most respected growing zones in Central America's northern reach. The Altos region is defined by small family farms, deep volcanic soil, and forest canopy that shades the coffee as it ripens slowly in the mountain cool. Finca Altura Vista Hermosa is one of those farms, worked by Mario Santiz Lopez and rooted in the indigenous communities that have grown coffee here for generations.
Elevation does the quiet work. At 1,200 to 1,700 meters, cooler temperatures slow the maturation of each cherry, concentrating sugars and building the layered sweetness that sets these highlands apart. After picking, the cherry is depulped and the beans are fermented to loosen the remaining fruit, then rinsed and dried.
