Description

Some coffees ask to be studied. This one asks to be enjoyed by the cup, ideally between strokes of a beard comb. Sourced from the rolling hills of Sul de Minas in southern Brazil, it is a crowd-favorite special edition we roast for as long as the green beans hold out.

Southern Minas Gerais

Sul de Minas sits in the south of Minas Gerais, the heart of Brazilian coffee country. On its own, this single region accounts for roughly a third of all the coffee Brazil sends to the world, which makes it one of the most influential growing areas on the planet. Rolling hills, a mild climate, and a long dry harvest season give farms here the stable conditions that built Brazil's reputation for dependable, sweet, easy-drinking coffee.

Most farms in the region work between 800 and 1,200 meters, with cooler mountain pockets climbing higher. That moderate altitude keeps the cup rounded and approachable rather than sharp, favoring the chocolate and nut character that defines the classic Brazilian profile. The dominant varieties are Yellow Catuai and Mundo Novo, hardy plants well suited to the terroir and prized for the body they bring to the cup.

The Craft

Pulped Natural, City+ Roast

This lot is pulped natural, a method that sits between the fully washed and natural approaches. After picking, the outer fruit skin is removed but much of the sweet mucilage is left on the bean to dry. The result balances the clean clarity of a washed coffee with the body and sweetness of a natural. We roast it to City+, a medium-light level that holds onto the bean's natural sweetness while developing a satisfying depth. We like our coffee with backbone and our beards stronger, so this one is built to stand up to milk, hold steady through a slow morning, and pour cup after cup without turning thin or harsh.
