Description

In Zambia's far north, where the Muchinga Mountains rise toward the Tanzanian border, the hill town of Mafinga anchors the country's coffee country. Nearly all of Zambia's exportable crop grows in this corner of the Northern Province, on cool ridges most coffee drinkers have never heard of. We selected this naturally processed lot for its jewel-bright fruit and unmistakable sweetness.

Coffee Country in the Muchinga Mountains

Mafinga sits in the highlands of northern Zambia, near where the country meets Tanzania. The surrounding hills hold the highest ground in the nation, and roughly 97 percent of Zambia's exportable coffee comes from this single province. Growing here is split between a handful of larger estates and a network of smallholders, many of them brought into coffee through rural development programs that began in the 1970s and 80s.

The growing belt runs between 1,300 and 1,600 meters, cool enough to slow cherry maturation and concentrate sugars in the bean. That high-altitude ripening, paired with the region's volcanic-influenced soils, gives Zambian coffee a clarity and fruit-forward character that has slowly earned it a reputation as one of East Africa's quietly excellent origins.

The Craft

Natural Processing and a City+ Roast

This lot is natural processed, a method that has been part of Zambian coffee since commercial production took root in the 1950s. The whole cherries dry slowly in the sun on raised beds, and the fruit pulp stays in contact with the seed the entire time. That extended contact is where the syrupy body and candied fruit notes come from. We roast this coffee to City+ in small batches at our Virginia Beach roastery. The roast stops short of any roasty bitterness, leaving the natural-process sweetness and the bright Zambian acidity intact. The result is a cup that pours with a reddish, jewel-like hue and tastes as vivid as it looks.

Jewel-Bright and Thoroughly Sweet

The first impression is fruit, loud and ripe. Sweet grape candy leads, followed by a filling of cherry pie that carries through the middle of the cup. The body is full and syrupy, coating the palate while a lively acidity keeps everything bright rather than heavy.

As it cools, the red-fruit sweetness deepens and rounds out, the kind of cup that rewards slow drinking. Exotic without being challenging, it is a fine introduction to what Zambia can do.
