In the hill country of southern Minas Gerais, coffee grows differently than the Brazilian stereotype suggests. Instead of endless flat plantations, the towns of Machado, Poço Fundo, and Campestre are stitched together from sitios, the small family farms that give this lot its character. The result is a cup built on depth rather than acidity.

The Sitios of Southern Minas

Brazil is the largest coffee producer in the world, and most of its output comes from sprawling estates worked by machine. Sul de Minas tells a quieter story. Across Machado, Poço Fundo, and Campestre, coffee is farmed on sitios, the small plots run by families who know every row by name. Legender Especial is a blend drawn from these holdings, assembled to capture the consistent sweetness the area is known for rather than the profile of any single farm.

The hilly landscape does real work here. Elevations between 1,100 and 1,200 meters cool the nights and slow the cherries as they ripen, and the folds of the terrain throw shade that protects the trees through the heat of the day. That combination of altitude and dense, mineral-rich soil is what lets these small lots punch above the regional average for body and balance.

The Craft

Natural Process, Patient Roast

This is a natural coffee, dried with the fruit still on the seed. After picking, the cherries rest on patios and raised beds where the sugars in the surrounding pulp migrate inward over days of slow drying. We roast these sitio lots to City+, a level that draws out the chocolate and caramelized sugar without flattening the fruit underneath. It is roasted in small batches so the sweetness stays clean and the body stays creamy rather than scorched.
