On the Kintamani plateau, coffee grows in the shadow of Bali's volcanoes, tended on family plots between rows of citrus trees and watered by an irrigation system older than a millennium. Bali Blue Moon comes from family-owned farms in the Kintamani highlands, the cool volcanic plateau that anchors coffee growing on the island. Farms sit in rich volcanic soil at 1,200 to 1,600 meters, planted alongside citrus and other fruit trees that shade the coffee and give farmers a second source of income.
Production is organized around the Subak Abian, a cooperative system of ecologically sustainable irrigation developed in Bali more than a thousand years ago and rooted in the island's Tri Hita Karana philosophy of harmony between people, nature, and the spiritual world. That tradition keeps these farms organic by design rather than by retrofit, and it gives the region a structure for shared water, shared standards, and shared quality.
The CraftWet-hulled, but cleaner than the Indonesian norm
Most Indonesian coffee is wet-hulled, a regional method known locally as Giling Basah where the parchment is stripped from the bean while still wet and the coffee finishes drying bare. Bali Blue Moon is wet-hulled too, but the careful sorting and higher-elevation fruit pull the cup toward clarity instead of mustiness. The cup leads with milk chocolate and brown sugar, the rounded, syrupy sweetness you expect from a wet-hulled Indonesian coffee. Then it does something most of its neighbors do not: it lifts. Lemon brightness and a note of strawberry surface against the heavy body, a clarity that comes from clean processing and altitude. The result is full and comforting without the muddy, savory edge that defines a lot of Indonesian coffee. It holds milk well and makes a deep, chocolatey base for espresso.
