Limestone Highlands of the Northwest

Son La sits in Vietnam's mountainous northwest, where Arabica grows on cool slopes well above the heat that defines the rest of the country's coffee map. The province is now second only to Lam Dong for Arabica volume, and its reputation rests on terroir rather than scale. Limestone bedrock breaks down into mineral-rich, free-draining soil, the kind of foundation that gives Arabica room to develop without sitting in waterlogged ground.

Climate does the rest. Daytime warmth gives way to cool nights, and that swing of roughly ten degrees slows cherry development on the branch. Local growers here have been steadily reorienting toward Catimor and careful selection, trading the country's old volume-first habits for quality.

The Craft

Washed for Clarity, Roasted to City+

This lot is wet-processed, the washed route that strips the cherry's fruit and mucilage from the seed before drying. The result is a clean, transparent cup where the bean's own character leads rather than the fermenting fruit, which is exactly what you want when the goal is brightness and definition. We sort at three stages, at the mill, again at import, and once more at our roastery, so the beans entering the roaster are uniform in size and density. Uniformity matters because it lets us develop the roast evenly. We take this Catimor to City+, a roast that builds sweetness and body while protecting the clean acidity Son La is known for. We log each batch and adjust for seasonal variation to keep the profile steady through the year.

Clean Brightness, Then Sweetness

The first impression is unexpected for Vietnam, a tea-like brightness with a clean citrus lift. From there the cup opens into rich butterscotch and caramel, with a quiet cocoa note underneath. A mineral thread runs through the middle, a fingerprint of that limestone ground, and carries into a smooth, full-bodied finish.

Give it a few minutes in the cup and herbal nuances surface as it cools, turning a straightforward pour into something layered. It is approachable enough for everyday drinking and complex enough to reward attention.
