In the highland village of Aifu, smallholder families have been growing coffee in the cool shade of Ermera for generations. This is the coffee of one of the world's youngest nations, a country that rebuilt its economy one washed lot at a time. We selected this Typica for its rare savory-sweet character.

Ermera is the heart of Timorese coffee, producing close to half of the country's harvest. Its western highlands climb from gentle slopes into steep ridges, and the village of Aifu sits among them where smallholder families tend heirloom Typica beneath canopies of shade trees. At 1,400 to 1,600 meters, the cherries mature slowly in the mountain air, concentrating the sugars that give this cup its depth.
Coffee carries enormous weight here. In a nation that gained independence in 2002, it remains the largest non-oil agricultural export, supporting tens of thousands of farming households. Because chemical inputs have always been scarce, most farms are organic by default and rely on the kind of patient, traditional cultivation that specialty buyers prize. Tasting Timor-Leste in the United States is still uncommon, which makes this lot a genuine chance to widen the map.
The CraftWashed Clean, Roasted to City+
The cherries are hand-picked at peak ripeness, then fully washed: the fruit is pulped, the beans are fermented and rinsed, and the parchment is laid out to dry slowly on raised beds. This washed processing strips away the fruit before drying, which is exactly why Timorese coffee tends to taste cleaner and sweeter than many of its Southeast Asian neighbors. The result is transparency, a cup that shows its origin without muddiness.
We roast this coffee to City+, a medium-light level that softens the sharper acids while keeping a clean fruit edge intact. Pushing it darker would flatten the cocoa and bury the cherry. Stopping here lets the savory-sweet backbone of the Typica come forward, balanced against a steady, chocolatey weight.
