Description

In western El Salvador, the land rises toward a chain of volcanoes that have shaped coffee here for generations. The San Miguel Mill sits in Ahuachapán, where ash-fed soils and a steady mountain climate give Bourbon room to ripen slowly and sweetly.

The Apaneca-Ilamatepec Highlands

Ahuachapán anchors the Apaneca-Ilamatepec range, the mountainous belt that produces more than half of El Salvador's coffee. Active volcanoes nearby, including Santa Ana and Izalco, have layered the slopes with fertile Andisols, the ash-rich soils that give coffees from this corner of Central America their depth and clarity. Distinct wet and dry seasons let cherries mature at an unhurried pace.

The San Miguel Mill has run as a family operation since 1975, with knowledge passed down across six generations of growers and processors. The farm works at 1,250 meters, a band where cooler nights slow the fruit and concentrate its sugars. At this altitude, the Bourbon variety, the cornerstone of Salvadoran coffee, settles into the balanced sweetness the country is known for.

The Craft

Fully Washed, Roasted to City+

This lot is fully washed, the traditional Salvadoran method in which ripe cherries are depulped and fermented to lift the fruit away from the seed before a final rinse. The result is a clean, transparent cup that lets the bean's own character show through. We roast this coffee a touch past our usual mark to a deeper City+, drawing out a fuller body and richer sweetness while holding onto its brightness. The extra development brings chocolate and honey forward without flattening the crisp acidity that defines high-grown Bourbon.
