Description

In 1541, the Agua Volcano sent a wall of mud down its slopes and erased Ciudad Vieja, Guatemala's second colonial capital. The survivors moved four miles north and built Antigua. Centuries later, the same volcanic ground feeds some of Central America's most celebrated coffee.

A Valley Ringed by Volcanoes

Antigua is the oldest coffee-growing region in Guatemala, a country that has stood among Central America's coffee leaders since the 1950s. The valley sits inside a ring of three volcanoes: Agua and Acatenango, both dormant, and Fuego, which still vents ash and lava through the day. That ash settles across the surrounding fields and renews the soil with minerals year after year, a slow process tens of thousands of years in the making.

The coffee here grows on volcanic slopes and along the valley floor at elevations between 1,500 and 1,700 meters. Cool nights slow the cherries as they ripen, which lets sugars build and concentrate inside the bean. The mountains form a natural windbreak that steadies daytime temperatures, and the porous volcanic soil holds moisture through the dry months. Growers favor traditional Bourbon and Caturra, varieties that reward this combination of altitude, mineral-rich ground, and a steady microclimate.

The Craft

Fully Washed, Patio Dried

This lot is fully washed, the method that built Antigua's reputation for clean, transparent cups. Ripe cherries are pulped at the mill, then fermented to break down the fruit mucilage before the parchment is rinsed clean. Removing the fruit early keeps the cup bright and lets the bean's own structure come forward. After washing, the parchment is spread across patios and turned by hand under the Guatemalan sun until it reaches the right moisture. Sun drying on patios is slow and attentive work, and it gives this coffee its above-average body and even sweetness. We roast it to City+ in small batches, a level that holds the orange acidity in balance while drawing out the chocolate and brown sugar underneath.
