Description
High on the volcanic plateau of central Flores, the town of Bajawa sits in the shadow of Mount Inerie. Coffee here grows in soil enriched by volcanic ash, on slopes where smallholders have farmed for generations. This lot comes from the Ngada Regency, the island's coffee heartland.

Bajawa is the capital of the Ngada Regency, where the majority of Flores coffee is grown. Roughly 90% of the regency's production is Arabica, cultivated across an estimated 6,000 hectares of upland plots. Twelve cooperatives work together across these communities, pooling the harvests of countless smallholding families who tend small parcels by hand.
The terroir here is shaped by Mount Inerie and the surrounding volcanic domes. Ash from past eruptions has built deep, mineral-rich soils, and the cool high-altitude climate of the plateau slows cherry maturation. That slow ripening concentrates sugars in the bean and gives Flores coffee its signature depth and weight.
The CraftNgura, the Flores Wet-Hull
Local farmers process this coffee using a method they call ngura, a regional form of wet-hulling closely related to Sumatra's giling basah. Cherries are pulped, briefly fermented, then hulled while the beans still carry high moisture. This produces the distinctive blue-green beans of Indonesia and builds the heavy body and low acidity that define the region. We roast this coffee to City+ in small batches at our Virginia Beach roastery. The roast is calibrated to honor the wet-hull character, keeping the syrupy body and earthy sweetness intact while letting the cocoa and cedar notes step forward rather than getting buried.
