High in the mountains above Chiang Mai, the Lahu people of Law Wu village tend coffee trees on ground that once grew very different crops. At 1,700 meters, cool air and natural shade slow the cherries toward a deep, even ripeness. This is Northern Thailand writing a new chapter in specialty coffee, one careful harvest at a time.

Law Wu is a remote Lahu community in the highlands of Chiang Mai, home to roughly thirty families who descend from an indigenous people with roots across southern China and mainland Southeast Asia. Coffee is recent here, planted in the wake of the Royal Project that introduced cash crops to replace opium across the northern mountains. What began in 2017 with a handful of farmers and grew into a nine-member cooperative, each tending trees on terraces carved into steep, forested slopes.
The mountains do the patient work. Mild tropical days, cool nights, and low humidity push cherry development slowly, concentrating sugars in the fruit. This is classic high-altitude coffee terrain, where elevation buys time and time builds flavor. The farmers work in partnership with Lanna Coffee and the Integrated Tribal Development Foundation, which has spent three decades bringing clean water, education, and agricultural training to hill-tribe villages.

This lot is natural processed, meaning the whole cherries dry slowly in their own fruit rather than being pulped and washed.
