Description
In Peru's far north, where the Andes break apart into cloud forest before falling toward the Amazon, the Amoju River runs clear and cold through San Ignacio. The Awajun people named it "fresh water." Five hundred and thirty-five families farm coffee along its left bank.

San Ignacio sits in Cajamarca, the region many consider the high point of Peruvian coffee. When Peru held its first Cup of Excellence in 2017, eleven of the nineteen winning lots came from Cajamarca, and the country has competed at that level every year since. The province climbs from river valleys into cool mountain forest, where the Amoju and the larger Maranon River both feed the Amazon far to the east. This is smallholder country: families working three to five hectares each, their plots tucked into the slopes above the water.
The Rio Amoju cooperative formed in September 2016, bringing those 535 producers together to lift both quality and the price they earn for it. At 1,800 meters, cherries ripen slowly in the cool air, building the dense sugars that give Cajamarca coffee its reputation for balance and sweetness. The cooperative farms organically and builds climate-resilient practices into every season, work overseen by a quality team that cups each lot before it leaves the region.
The CraftFully Washed, Patio Dried
These cherries are fully washed, the standard across Cajamarca and the method that keeps Peruvian coffee clean and clear in the cup. Producers depulp the fruit, ferment the beans to loosen the remaining mucilage, then wash it away with the same fresh water that gives the river its name. We roast this coffee to City+ at our Virginia Beach roastery, a level that holds the bean's natural sweetness without scorching its delicate sugars. This is comfort coffee in the truest sense. It opens with milk chocolate and brown sugar, a soft sweetness that carries the whole cup, then a thread of toffee fills in the middle. A touch of orange lifts the finish and keeps things from turning flat, adding sweetness rather than sharp acidity. The body is medium and rounded, the kind of cup that drinks just as well black at sunrise as it does with a splash of milk.
