In the volcanic highlands of western El Salvador, the Apaneca-Ilamatepec range catches morning mist that settles over rows of Bourbon trees. The San Miguel Mill has worked this land since 1975, a family operation now stewarded across six generations. We selected this lot for the clean Salvadoran sweetness it carries from soil to cup.

Ahuachapan's Volcanic Shelf

El Salvador packs more coffee into its small footprint than almost any country in Central America, and the heart of that production sits in the west. The Apaneca-Ilamatepec range alone accounts for more than half the national crop, its slopes built from mineral-rich volcanic soil that drains well and feeds the trees a steady supply of nutrients. Ahuachapan, on the country's western edge, benefits from this geology along with cool nights that slow cherry maturation and concentrate sugars.

The San Miguel Mill has been family-owned here since 1975, a continuity that matters in a country where coffee weathered civil conflict, leaf rust, and decades of replanting. At 1,250 meters, this lot grows at an elevation that rewards careful picking, where the cooler air and longer ripening cycle deepen the cup's complexity. The Craft

Fully Washed Bourbon, Roasted City+

Bourbon is the cornerstone variety of Salvadoran coffee, grown here since the nineteenth century and prized for the rounded sweetness and gentle structure it delivers. After harvest, the cherries move through a fully washed process at the mill, where the fruit is removed before fermentation and the beans are cleaned in water. This method strips away muddiness and lets the bean's inherent character lead, producing the bright, transparent cup that washed Central Americans are known for. We roast this Bourbon to City+, a level that holds the bean just past first crack. It is enough development to round the acidity and pull out chocolate sweetness, but stops well short of scorching the delicate red-apple notes the washed process worked to preserve. The goal is balance, not roast character standing in for origin.
