On the western slopes of Mauna Loa, above Kealakekua Bay, a narrow strip of volcanic land called the Kona Coffee Belt produces one of the most distinctive coffees grown on American soil. Hala Tree Farms sits in the village of Captain Cook, at the heart of it. We selected their Extra Fancy lot, the largest and most carefully sorted grade Hawaii produces.

The Kona Coffee Belt is a thin band of orchards running along the leeward slopes of Mauna Loa and Hualalai. The microclimate here is unusual: sunny mornings, cloudy afternoons that shade the trees through the hottest part of the day, mild temperature swings, and well-drained volcanic soil. Coffee has grown in this district since the early 1800s, and the conditions remain difficult to replicate anywhere else.
Hala Tree Farms is a family-run operation on roughly fifty acres of traditionally terraced land first built generations ago by Japanese settlers. The current owners revived the farm after it sat neglected for over a decade, working it organically without synthetic pesticides. At these moderate growing elevations, the Typica trees ripen slowly and concentrate sugar in the cherry, which is what gives well-grown Kona its clean sweetness.
The CraftHand-Pulped, Wood-Fermented, Sun-Dried
This is a washed coffee, processed on the farm with old-school care. Ripe cherry is pulped, fermented in wooden tanks to break down the fruit mucilage, then washed clean and dried in the Hawaiian sun. That sequence produces the transparent, sweet cup Kona is known for. Extra Fancy is the top of Hawaii's grading scale. The beans are the largest size sorted, too big to pass through a 19/64 inch screen, with the strictest defect limit. Only about a fifth of any Kona crop qualifies. We roast it to City+, a medium-light level that protects the delicate sweetness and floral character rather than burying it under roast.
