In the Hama hills of Kochere, cherries from more than a thousand smallholders converge on a single washing station named Jet. This Yirgacheffe lot delivers the region's classic profile, floral, fruity, and citrus-bright, without unnecessary complexity.

The Jet Washing Station at Hama

Hama is a small kebele in the southern part of Kochere, a district in Ethiopia's Gedeo Zone that anchors the wider Yirgacheffe growing region. Here, the privately run Jet Washing Station receives ripe cherry from more than a thousand registered smallholders farming the surrounding slopes. Each delivery is recorded, which lets the station track quality back to individual farms and reward careful picking, a level of traceability that has made Hama lots sought after by roasters well beyond Ethiopia.

The terroir is classic Yirgacheffe: volcanic soil, abundant spring water for processing, and elevations between roughly 1,800 and 2,100 meters that slow cherry maturation and build sweetness and acidity. Ethiopia's heirloom varieties, thousands of indigenous landrace cultivars evolved over millennia, produce flavors no hybridization program can replicate.

The Craft

Washed: The Yirgacheffe Standard

Cherries arrive at the station within hours of harvest. Depulped immediately, the beans ferment in clean water just long enough to break down mucilage without developing off-flavors. Multiple rinses wash away any remaining fruit, then the beans spread across raised beds to dry slowly under the highland sun.

This meticulous wet processing creates the sparkling clarity Yirgacheffe is known for, bright acidity, clean florals, and a tea-like body that lets delicate aromatics float rather than sink under heaviness. We roast it to City+, a level that protects those high notes while drawing out the cup's quiet sweetness.

Straightforward Elegance

Lemon brightness opens clean and sharp, the acidic lift that wakes you up before the caffeine kicks in. Floral notes follow, not jasmine's intensity, just gentle aromatic presence. Apricot sweetness balances the citrus, while black tea tannins in the finish add structure without bitterness. The light body keeps everything crisp and refreshing, a coffee that invites multiple cups without fatigue.
