Description

In the highlands of southern Ethiopia, the Guji Zone has earned a reputation as one of the most exciting coffee origins on the map. Near the village of Derikidame, 650 smallholder families tend small plots between 1,900 and 2,000 meters. The cherries they pick ripen slowly in thin mountain air, and it shows in the cup.

Guji, Where the Cherries Ripen Slow

Guji sits in the Oromia region of southern Ethiopia, just south of the better-known Yirgacheffe area. For years its coffees were blended into generic Sidamo lots, but Guji has since stepped out on its own, prized for clean, fruit-forward cups that compete with anything Ethiopia produces. The forested hills here, dense red soil and consistent rainfall give farmers a long, even ripening window.

This lot is the work of 650 families farming around Derikidame village in the Hambela Wamena district. Their ripe cherries travel to the Derikocha Washing Station, run by Ashenafi Woressa, where careful sorting separates the finest fruit before drying begins. That kind of high-altitude growing builds the dense, sugar-rich beans that make natural processing sing.

The Craft

Sun-Dried on Raised Beds

This is a natural coffee, meaning the whole cherry dries intact with the fruit still wrapped around the seed. At Derikocha, cherries rest on raised African beds for roughly 12 to 15 days. Workers rake and turn them every two to three hours, cover them through the midday sun and tuck them in overnight against rain. We roast this one to City+, a medium-light level that protects the bright fruit the natural process builds while rounding it with a touch of cocoa depth. Roasted in small batches, it stays expressive rather than heavy.
