Two hundred fifty miles southwest of Addis Ababa, the Kochere district sits at the heart of Yirgacheffe, the small belt of southern Ethiopia that gave the world its template for what bright, floral coffee can be. Iron-rich red soil, thin mountain air, and generations of smallholder knowledge meet here in one of coffee's most celebrated origins.

A Birthplace of Specialty Coffee

Ethiopia is the genetic home of arabica, and within it Yirgacheffe holds near-mythic status among roasters and drinkers alike. Kochere is one of its most prized districts, a patchwork of garden plots where coffee grows alongside food crops on plots often smaller than a single acre. The trees are Ethiopian heirloom types, indigenous selections known locally by names like Kumie, Diga, and Wilsho, descended from forest coffee rather than the cultivated varieties common elsewhere in the world.

What makes this corner of the country exceptional is the marriage of soil and sky. The acidic, iron-rich earth feeds the trees while the high altitude above 1,800 meters slows cherry maturation, concentrating sugars and acids into the kind of clarity Kochere is known for. Hundreds of smallholder families harvest by hand and carry their ripe cherries to a nearby washing station, the shared engine of quality across the region.

The Craft

Washed for Clarity, Roasted to City+

At the washing station, only ripe cherries are accepted and graded before depulping. The coffee then ferments underwater for roughly 36 to 48 hours, a step that breaks down the fruit's sticky mucilage and lets the bean's own character come forward. After a thorough wash through grading channels, the parchment is spread across raised African drying beds, where workers turn it by hand over about two weeks until the moisture settles near 12 percent. We roast this lot to City+, a medium-light level that protects the floral top notes and tea-like delicacy a washed Yirgacheffe is prized for. Push it darker and the perfume collapses into roast. Kept bright, the cup keeps its lift.
