Origin Brazil Region Cerrado Elevation 900-1,250m Process Natural Variety Bourbon, Catuai The SourceThe savanna plateau that changed Brazilian coffee
Cerrado Mineiro sits northwest of Minas Gerais, where savanna plateaus stretch across some of the most biodiverse land on earth. In 2005, this became Brazil's first coffee region to earn Denomination of Origin status, recognition that terroir here produces something distinctive. Relatively flat terrain at 900 to 1,250 meters, red volcanic soil kept fertile by well-defined wet and dry seasons, and abundant year-round sunlight create conditions that let coffee producers focus on precision.
The distinct dry season matters here more than anywhere else in coffee. It allows natural processing at scale without the risk that moisture brings. Seventy percent of Cerrado's production gets exported to over 50 countries, carrying Brazil's chocolate-and-nuts signature to cups worldwide.
The CraftNatural processing under Brazilian sun
Natural processing is patience made tangible. Whole cherries dry slowly in the sun on concrete patios, their fruit sugars infusing the bean with pronounced sweetness and full body. Brazil's climate, especially Cerrado's dependable dry season, makes this the country's processing method of choice. While other origins struggle with moisture and inconsistency, Brazilian producers have perfected the craft of drying cherries evenly, avoiding over-fermentation while maximizing sugar concentration.
The result is coffee that doesn't chase brightness or floral complexity. It offers something more fundamental: richness, chocolate depth, and the kind of low acidity that makes mornings easier. This is coffee that knows its role.
Bakers Chocolate Brown Sugar Walnut Caramel Body Full Acidity Low The CupComfort without apology
This cup greets you with bakers chocolate, the kind that anchors a cup rather than shouting for attention. Brown sugar sweetness follows, lending depth without crossing into syrupy territory. Walnut nuttiness emerges as the cup cools, with caramel notes in the finish that linger just long enough. The full body carries weight without heaviness, and the low acidity means this coffee plays well with sensitive stomachs and early mornings alike. It's the daily drinker that doesn't demand precision or ceremony, just hot water and a willingness to start the day right.
