Ngorongoro Crater is a UNESCO World Heritage site and the largest intact volcanic caldera on the planet. Along its northern rim sits Gaia Estate, 620 hectares of mineral-rich volcanic loam managed by Neel and Kavita Vohora. Third-generation growers of Indian heritage, the family has worked in Tanzanian coffee since the end of World War II, building more than 60 years of export experience out of Arusha.
Tanzania ranks among Africa's most respected coffee origins, and the country's high-grown northern estates draw frequent comparison to neighboring Kenya. The elevation here, climbing to 1,800 meters, keeps temperatures cool and slows cherry maturation, building sugar and concentration in the bean. To understand why high-altitude coffee develops this kind of clarity, the answer is in the slow ripening these heights demand. The estate sustains its surrounding ecosystem with a permanent staff of more than 50 and up to 1,500 seasonal workers, alongside macadamia and beekeeping that diversify the land.
The CraftPrecision in the Washing Channel
Post-harvest work at Gaia Estate is Kenya-level meticulous. Pickers take only cherries at peak ripeness, then the fruit is gently depulped and fermented under controlled temperatures for 36 to 48 hours. That extended ferment builds complexity without tipping into off-flavors. After a clean-water wash, the coffee dries for roughly two weeks on raised African beds, turned regularly so moisture leaves evenly and no defects creep in. The AA grade marks the largest, most developed beans of the harvest, screen 17 and 18. We finish them at a City+ roast, stopping just past first crack so the volcanic minerality and citrus structure stay intact. Pushing darker would flatten the grapefruit lift that defines this coffee, so we hold the line where the sweetness and acidity meet.

Semi-sweet dark chocolate follows close behind, building contrast against the fruit, and caramel threads through the mid-palate to round everything out. Medium-full body carries all of this with presence, while the bright acidity keeps the chocolate from feeling heavy.
