Description
In the rolling hills of southern Rwanda, near the city of Huye, smallholder farmers carry their day's harvest up steep volcanic slopes to a washing station built on a simple promise: that small producers deserve a seat at the specialty table. This is one of those lots.

Huye District sits on Rwanda's central plateau in the country's south, where rolling hills and rich volcanic soils create the varied microclimates that Bourbon loves. The coffee here grows between 1,900 and 2,300 meters, and that high-altitude environment slows the cherries as they mature, concentrating the sugars and acids that give Rwandan coffee its layered, complex character. Rwanda is a small producer by global volume, but over the past two decades it has rebuilt its industry around quality, and the south has become known for cups full of red fruit, caramel, and spice.
The Huye Mountain washing station was founded in 2011 by David Rubanzangabo, an agronomist who began his career with the National Coffee Board and helped shape Rwanda's early specialty sector. Around 1,330 smallholder farmers from the surrounding hills deliver freshly picked cherry to 26 collecting stations, a structure that gives even the smallest grower a route to the international market. This particular lot is a top selection of 100 percent Bourbon, the heirloom variety that anchors Rwanda's reputation.
The CraftNatural Processing on Raised Beds
Most Rwandan coffee is washed, which makes this natural lot a deliberate departure. After harvest, the cherries are hand-sorted and laid whole on raised African beds, where they dry slowly with the fruit still on the seed for 14 to 28 days depending on the weather. Workers turn the cherries by hand through the entire stretch, guarding against mold and uneven fermentation. The result is a fruit-forward expression you rarely see from this part of the country. If you want to understand how this differs from the washed coffees Rwanda is known for, our guide to natural and washed processing breaks it down.
We roast this coffee to City+ at our Virginia Beach roastery. That roast level sits just past first crack, deep enough to round out the body and draw out the chocolate, but restrained enough to protect the bright berry character the natural process worked so hard to build.
Strawberry Raspberry Dark Chocolate Cognac BodyMedium-Full AcidityBright The CupBerry, Chocolate, and a Lingering Finish
The cup opens with ripe strawberry and raspberry, the kind of bright, jammy fruit that only the natural process delivers. Underneath, a layer of dark chocolate gives the coffee weight and structure, while a warming, cognac-like sweetness carries through the long finish. The body is medium-full and the acidity stays lively without turning sharp.
It is an expressive, fruit-driven cup that rewards a careful pour, and it makes a striking case for what natural processing can do in a region built on washed coffee.
Find Your FixThe fruit really sings through a Chemex or V60, where a slow pour gives the berry notes room to bloom. Cold brew turns the chocolate and cognac sweetness silky, and a single-origin espresso pulls a syrupy, jam-like shot. Explore the rest of our coffee beans and find your fix.
