The Sierra Madre de Chiapas mountains create a blanket of shade where small-holder farmers cultivate coffee under native forest canopy, a practice that predates the organic movement by centuries. Indigenous Maya communities maintained these agro-ecosystems for generations, relying on biodiversity for pest protection and soil health long before it became certified.
At 1,200-1,750 meters, rainfall is abundant and the volcanic soil is nutrient-rich. The lush forest canopy slows cherry maturation, developing sugars that natural processing will amplify.
