Description

In the highlands of Los Altos, Chiapas, a village called Chimhucum takes its name from the Tzotzil words for "two rivers." Here, small producers descended from the Maya grow coffee the way their families have for generations, by hand and with patience.

Two Rivers in the Tzotzil Highlands

Mexico ranks among the world's largest coffee producers, and Chiapas, its southernmost state, grows the lion's share. The mountains of Los Altos rise steeply along the Guatemalan border, where cool air and consistent shade slow the cherries toward full maturity. This is some of the country's most respected growing terrain.

The producers here belong to the Tzotzil community, direct descendants of the Maya, who farm small plots scattered across the slopes at 1,780 meters above sea level. Coffee grows under a canopy of native shade trees, a practice that protects the soil, the watershed, and the slow flavor development that high elevation rewards.

The Craft

Hand-Pulped, Wooden-Fermented, Patio-Dried

Every step is traditional. The cherries are hand-depulped, then rested in wooden fermentation tanks for roughly six to twelve hours before the seeds are washed clean. This careful washed processing draws out a clean cup with pronounced fruit sweetness and a lively acidity that the altitude makes possible.

The coffee finishes slowly on raised patios under the Chiapas sun, dried by hand and turned often. We roast it to City+, a medium-light level that keeps the toffee sweetness and orchard-fruit brightness intact rather than masking them with development.

Sweet, Round, and Lively

The cup opens with toffee and brown sugar, then a bright lift of orange cuts through the sweetness. Black cherry rounds out the finish, leaving a soft, juicy impression. The body stays light-medium and clean, which lets the fruit and acidity carry the experience without weighing it down.
