Description

In the deep south of Huila, the town of Timaná sits in a narrow valley carved by the upper Magdalena River, hemmed in by two branches of the Colombian Andes. Roughly two thousand smallholders farm these slopes. The fruit they pick rarely travels far before processing, and the clarity shows in the cup.

A Valley Built for Coffee

Huila grows more coffee than any other department in Colombia, and it earns that volume with quality rather than just acreage. The region holds a Denomination of Origin granted in 2013, and Huila lots turn up regularly among Cup of Excellence winners. Nitrogen-rich volcanic soil, steady mountain rainfall, and the long ripening that comes with high-altitude growing all push the cherries toward dense, sweet, well-defined character.

Timaná lies at the southern tip of the department, where the Magdalena valley funnels between the central and eastern Andean ranges. The smallholders here work plots measured in hectares, not estates, planting Caturra alongside the disease-resistant Castillo and Colombia cultivars. That mix of varieties and the spread of family farms give the microregion a consistency that buyers have come to count on.

The Craft

Washed for Clarity

These cherries are fully washed, the standard across Huila and the method that defines the region's reputation for clean, bright cups. After harvest the ripe fruit is pulped, then fermented in tanks for sixteen to twenty-four hours to break down the sticky mucilage. Growers rinse the parchment clean and dry it slowly, finishing in the sun and on mechanical dryers until the moisture settles where it should. We roast Timaná to City+, a medium-light level that protects the citrus and stone-fruit acidity while letting a deeper chocolate sweetness build underneath. The bean has the structure to carry a fuller roast, but pulling it earlier keeps the cup lively rather than flattening it into roast tones.
