Description

High in the mountains of Antioquia, Colombia, at roughly 2,000 meters, sits Finca La Reserva. Here grower Juan Felipe tends Geisha, a variety first found in the Gori Gesha forest of Ethiopia and now among the most prized in specialty coffee. We selected this lot for our roastery because it shows what careful processing can draw out of an already remarkable variety.

Finca La Reserva, Antioquia

Antioquia rises in steep, forested ridges across northwestern Colombia, a landscape that gives coffee long, cool growing cycles and dense, complex beans. Colombia ranks as the third-largest coffee producer in the world, and its industry supports more than 500,000 farming families. Finca La Reserva works within that tradition while pushing it forward, with Juan Felipe focusing since 2018 on better harvesting and experimental processing.

The farm pairs coffee production with conservation, protecting roughly 200 hectares of forest alongside its planted slopes. That elevation matters in the cup. The Craft

96 Hours Sealed, Then Honeyed

At Finca La Reserva, ripe Geisha cherries are floated to sort out the less dense beans, then depulped with some sticky mucilage left intact. The coffee ferments in sealed, oxygen-free tanks for 96 hours, an anaerobic step that steers fermentation toward bright, fruit-forward flavors. It then dries slowly on raised beds, the honey method that carries forward a layered sweetness. See how these processing methods compare.

We roast this lot to City+ in small batches, a level that keeps the floral lift and tropical fruit intact rather than burying them under roast. The goal is to let Geisha and that long fermentation speak clearly through the cup.
