Swiss Water decaf is a proprietary method for removing most caffeine from green coffee before roasting. It does not directly apply conventional decaffeination solvents such as methylene chloride or ethyl acetate to the beans. Instead, the process uses Green Coffee Extract, diffusion, and carbon filters.

Decaf means most caffeine has been removed
Coffee contains caffeine before roasting. Decaffeinators work with green coffee because the beans have not yet developed the roasted flavors and structure that the roaster will later shape.
Decaf is not the same as caffeine-free. The amount left in a cup depends on the green coffee, decaffeination performance, dose, brew recipe, and serving size. A process percentage and a measured beverage result answer different questions.
That distinction matters most for someone who is highly sensitive or has been told to avoid caffeine. For everyone else, decaf offers a practical way to lower caffeine while keeping coffee's aroma, flavor, and ritual in the day.
The ProcessHow Swiss Water removes caffeine
The following description comes from the Swiss Water company's process information. It explains a proprietary manufacturing method, not an independent health study.
1. Prepare the green coffee
The facility cleans the green coffee and brings it to the moisture conditions needed for decaffeination. This step prepares the bean structure for a controlled transfer of soluble compounds.
2. Use Green Coffee Extract
Green Coffee Extract, often shortened to GCE, is water containing the soluble flavor components found in green coffee but little to no caffeine. Because the surrounding liquid already contains those coffee compounds, it reduces the concentration difference that would otherwise pull more flavor material out of the beans.
3. Move caffeine by diffusion
The prepared green coffee contacts the GCE. Caffeine moves from the beans, where its concentration is higher, into the surrounding extract, where its concentration is lower. Diffusion is the accurate term for this movement. Calling it osmosis oversimplifies what is happening.
4. Filter caffeine from the extract
The caffeine-bearing GCE passes through carbon filters designed to retain caffeine. The refreshed extract returns to the coffee, and the cycle continues until the batch reaches the process target.
5. Dry and prepare the coffee for roasting
After decaffeination, the green coffee is dried to a stable shipping and storage condition. It can then travel to a roaster, where the roast profile still has a major effect on sweetness, acidity, body, and aroma.
What the Label MeansThe process does not make every coffee organic
Swiss Water distinguishes its method from processes that directly apply methylene chloride or ethyl acetate to green coffee. Water and carbon filtration are central to its caffeine-removal loop. That is a process description, not proof that one decaf method produces better health outcomes than another.
The process also does not turn conventionally grown coffee into certified organic coffee. Swiss Water states that coffee can retain certifications it already holds when the required chain of custody and handling standards remain intact. Look for an organic certification on the specific coffee if that attribute matters to you.
The same rule applies to Fairtrade, Rainforest Alliance, kosher, halal, or other marks. A certification belongs to a defined product and supply chain. It should not be inferred from the words "Swiss Water" alone.
The NumberWhat does 99.9% mean?
Swiss Water currently says that the vast majority of fully decaffeinated coffees in its store are 99.9% caffeine-free. Treat that as the manufacturer's statement about its processed coffee, not a guarantee that every brewed serving contains one fixed number of milligrams.
An analytical study of retail decaf coffee found 0 to 13.9 mg of caffeine in sampled 16 oz servings. Repeated samples of the same drinks also varied. A separate review of caffeine in coffee brews found that species, dose, ratio, time, temperature, grind, pressure, origin, and serving size all affect the caffeine delivered in a cup.
For most people, decaf reduces caffeine substantially. Someone who needs strict avoidance should not assume that "decaf" means zero.
The CupChoose decaf by coffee quality and flavor
Decaffeination changes green coffee, but it does not erase origin, processing, roast development, or brewing. A well-sourced decaf can still show fruit, chocolate, spice, caramel, or floral notes. The goal is not to make decaf imitate one generic flavor. It is to preserve enough character for the roaster to build a balanced cup.
When comparing coffees, look for:
- A named process. The label should clearly identify Swiss Water when that is the method used.
- Origin and tasting information. Decaf should tell you something about the coffee, not only what was removed.
- A roast date and sound storage. Freshness still matters after decaffeination.
- A recipe suited to the coffee. Start with the roaster's guidance, then adjust grind and ratio to taste.
If you are reducing caffeine, compare how you feel across several days. Sleep, anxiety, headaches, and timing can be more useful signals than chasing a universal cup count.
